Shojin thick rolled sushi

≪ingredients≫

laver, kanpyo, chopped shiitake mushrooms, Koyadofu (freeze dried tofu), fresh yuba, cucumber, mitsuba, vinegar, sugar, salt, dashi stock

 

精進太巻寿司

≪recipe≫

  • Boil rice slightly harder. Add vinegar, sugar, salt and dashi stock to the rice.
  • Cook kanpyo, shiitake mushrooms, koyadofu and yuba in slightly sweet seasoned.
  • Boil mitsuba and drain it.
  • Cut cucumber to even length.
  • Spread the rice thinly on the laver.
  • Align vegetables on the rice and roll them up.
  • Cut in slices and serve.
