Fried eggplant


eggplant, oil, sesame, soy sauce, sugar, dashi stock



  • First, cut eggplant in half, then cut each half into three pieces. Soak them in water for about 20 min.
  • Fry them in 170℃ oil until they become brown. Let them cool with the skin facing up. (Do not fry too much).
  • Mix grinded sesame, 1 spoon of soy sauce, 1 spoon of sugar and 2 spoons of dashi stock.
  • Serve eggplants with sauce.
