Yam Agar


Yam, sugar, salt, sake, agar, plum pulp


  1. Peel the yam and grate it.
  2. Prepare the agar needed to harden in the mould and dissolve it in 1/3 of water of the total quantity in a pot (remaining 2/3 will be yam) .
  3. Add 1. To 2. and mix well while heating.
  4. Season with sugar and salt and sake.
  5. Boil well and pour it into the mould when dissolved completely. Chill in water bath.
  6. When hardened cut and serve it with plum pulp.
