Kinkan kanroni

(cumquat stewed in soy sauce and sugar)


Cumquat, sugar, salt, sake


  • Rinse cumquat and cut approx. 12 nicks using the edge of a knife.
  • Mash cumquat and remove the seeds.
  • Rinse cumquat lightly, and align in a pot.
  • Add 30 g (3 table spoons) of sugar, 50 cc (1/4 cup) of sake and a bit of salt for 10 cumquats.
  • Start at medium heat, then boil 60 min. at low heat.
  • When the liquid vaporized, it is finished.
